As We Slip into Winter


I feel blue!

It's been so cold the last week; it's more like January
.

Oh, well...such is life.

My friend, Anne's daughter, Beth, requested Chop Suey for her birthday. I've had it as Chinese take-out before but never made it so she sent me her recipe. I'm thinking this would be a good week to try it since it's so different from a turkey dinner.

It is cold and sunny here. I have to finish taring my loveseat apart and get it put back together b/4 my dd comes home Tuesday. Oh, my what was I thinking? I've never seen so many staples in my life. I have never done this b/4 either. So it will be a learning process.

Tip to Chase the Blues Away:
Stop and Smell the Christmas Trees
and put a Song in Your Heart, sit by a warm fire and put something Warm in Your Hands and Stomach! Hot Chocolate or Cider.

The "Grateful Journal" is SUCH an awesome idea! I think I'll try that with my students!!! I'm an acting teacher so maybe I'll add a couple prompts about what they like about themselves and what they need to improve on (acting wise). I'm trying to teach them how to be good actors, and to not let their insecurities get in the way of being themselves. AWESOME IDEA. Here's a recipe for Filipino Adobo - which I'll be having for Thanksgiving this year.


Chicken thighs (with skin - needs the fat) - "slime removed" and chopped in half THROUGH the bone (needs the marrow too)

2 - 3 bay leaves

10 - 15 black peppercorns

1 cup soy sauce

1 cup vinegar

2 cloves garlic, smashed

Place the chicken thighs, soy sauce, vinegar, garlic, and peppercorns in a pot and cover. SIMMER on low for 45 minutes (or until cooked). Be careful turning over too much as the chicken will fall apart. Add the bay leaves 30 minutes in and remove after 10 minutes. Serve over white rice. If it is too vinegary, just add a little bit of sugar to tame.

The rain clouds do look a little sad. Will you have winter weather straight through to spring? We have winter in spurts, with maybe of couple of extreme cold/wet spells, but a lot of nice days too.
